Bunyols de l'Empordà recipe (5kg fritters)

INGREDIENTS FOR DONUTS
- Loose flour - 500 g
- Strong flour - 500 g
- Yeast: 70 g
- Sugar: 150 g
- Butter: 100 g
- Liquid cream: 100 g
- Salt: 20 g
- Matafaluga or green anise: 15 g
- Fresh eggs: 330 g
- Grated lemon peel - 1 g
INGREDIENTS FOR ANISE SYRUP
- Water: 1.000 ml
- Sugar: 1.000 g
- Dry overalls anise: 250 ml
PREPARATION AND PROCEDURE
Step 1: Mix all ingredients in the kneading machine for 4 minutes. Once we have the soft and homogeneous dough, we will let it rest for 15 minutes.
Step 2: We will stretch the dough into strips and cut. Then, we will deposit the strips, in a slightly circular way, in the relevant cans and we will leave it in the fermenter for 15-20 minutes until the dough reaches the appropriate volume.
Step 3: at this point, we will have prepared the Parisien paella with hot oil at 180ºC, ready to fry the donuts. We will take each donut in the center and apply a circular hole in the center and arrange it inside the hot oil. We will treat the donut correctly and let the oil drain. We can use some kind of grille or drain for this procedure.
Step 4: once we have them dry, we will bathe the donuts in dry anise and the preparation of syrup.
Step 5: Finally, we will let them drain in a can and wrap them in sugar according to their taste. It will depend on whether we like more or less sweets.
