The Mimosa or lemon mousse, is a cake that combines a gluten-free almond cake, a lemon mousse, a lime jelly and a subtle layer of white chocolate. This cake stands out for its balance between sweet and citrus.
The base of the cake is an almond cake. Made with almond flour suitable for celiacs and eggs, it provides a soft texture and a delicate almond aroma. This base is light and fluffy and serves as the perfect base for our Mimosa.
Lemon mousse is the main filling for this cake. Made with fresh lemon juice, eggs and sugar, it has an airy, creamy texture. Lemon mousse provides a slightly acidic sweetness and a refreshing taste. In between, we have a lime jelly that will reinforce the intensity and character of the cake.
The final touch, a subtle layer of white chocolate, perfect for our topping. It will confer the ideal balance between the sweet and acid of citrus fruits. The cream and white chocolate quenellas, a sensational aesthetic note.
