First of all, we make The Xantal base which is an almond griddle made of ground Marcona almonds and egg whites. It has a light texture and a delicate almond flavor, complex. The combination with praline muslin will be excellent.

Praline muslin is the star filling for this cake. This muslin is made with a base of pastry cream, butter, cocoa, a note of lemon and an almond and hazelnut praline. It confers a very noble, deep, complex, slightly refreshing flavor. We finish with cocoa powder and the chocolate ripple characteristic of this cake.
