Free range chicken cannelloni (3 units)

Our free range chicken cannelloni is a gastronomic experience of Baixas and Catalan cuisine. 100% handmade, made with the best quality organic chicken and a small proportion of beef and pork.

First of all, we rusted the organic chicken, beef and pork. At the same time, we can poke the onion and confit it. When it is well confit, mix the onion with all the rustided meat.

Then boil the milk and sour cream. When the boil has started, add all the previous preparation and finish cooking for an hour and a half. We will finish with a touch of salt, pepper and nutmeg.

Next, we will filter the recipe and pass it through the chopping machine, in order to obtain the desired thickness. At this point, we will add the duck liver that will provide a very special flavor and a very mellow texture to the whole, and we will emulsify everything until we obtain the desired texture.

The last step is to fill with the fresh pasta cut to measure and accompany with the bechamel sauce. We will grill with Emmental and Grana Padano at 50% to our liking.
