L'éclair de café is a delicious individual cake, of French origin, which combines the softness of lioness dough or "choux", with a creamy coffee filling.

Lioness dough is a light, airy dough made with flour, butter, water and eggs. This dough is injected with a pastry hose to create the desired elongated shape. Then bake until you get a crunchy texture on the outside and a tender and light interior.

On the other hand, the filling of creamy coffee, we get it as follows: we mix coffee, milk, eggs, sugar and flour. We cook everything until we get a smooth and creamy texture. Once everything is well emulsified, it is injected into the éclairs providing an intense coffee flavor and not extremely sweet. Very exquisite.

Finally, a touch of vital importance: frosting. Cover the top of the éclairs with a layer of coffee frosting, which will solidify with the temperature contrast. It will give us the desired sweetness and shine.
