The outline of the cake is a chocolate mousse, made from a 70% cocoa Valrhona chocolate ganache with cream and semi-whipped cream added.

The heart of the cake is a raspberry cream. Made from a milk chocolate ganache, pure raspberry pulp of the best quality, and cream.

The final topping is 70% cocoa Valrhona chocolate with a decoration of rose petals that are made of white chocolate.

The result is a sensational balance between the slight bitterness of chocolate and the sweetness and acidity of raspberries. Chocolate and berries have always combined very, very well.
