Ensaimada Recipe (for 240 ensaimadas)

INTRODUCTION

Ensaimada is a traditional sweet with a light and fluffy dough, made with quality lard, rolled in a circular shape and with a soft coating of icing sugar. This classic ensaimada is a delight that combines tradition and flavor in every bite.

INGREDIENTS

YEAST (EVERY TIME WE MAKE ENSAIMADAS)

  • Strength flour: 1200 g
  • Yeast: 270 g
  • Water: 650 g

MASA

  • Strength flour: 5250 g
  • Sugar: 2400 g
  • Butter: 180 g
  • Salt: 80 g
  • Sourdough: 500 g
  • Eggs: 1400 g
  • Water: 1500 g
  • Sunflower oil: 350 g
  • Liver: 7200 g

SOURDOUGH (PREVIOUSLY MADE)

  • Loose flour: 1000 g
  • Strength flour: 1000 g
  • Sugar: 60 g
  • Butter: 120 g
  • Yeast: 100 g
  • Water: 1100 g

PROCEDURE

  1. Preparation of the main mass: First, we will proceed to make the main dough of our ensaimada by adding the strong flour, sugar, butter, salt, sourdough, eggs and water. Let the whole thing knead for 10 minutes.
  2. Add the yeast: The next step will be to add the yeast to our previous dough. Let it knead for another 10 minutes.
  3. Add the sourdough: Next, add the 500 g of sourdough and let it knead for another 20 minutes.
  4. Add the sunflower oil: Finally, add the 350 g of sunflower oil in 3 parts for proper absorption. At this point, the dough will be complete.
  5. Formation of balls: From our dough, we will make balls of 60 g each in which we will add 30 g of lard in each one. Therefore, each ball will have about 90 g of dough approximately.
  6. Rest of the balls: Let these balls rest for 2 hours. Once the time has elapsed, roll out the dough and roll it up, looking for the shape of the ensaimada. We will leave a slight space between layers so that the fermentation can do its job.
  7. Fermentation: This will be the time to put our ensaimadas to ferment. Ferment for 20 hours at 28°C.
  8. Batch: Once fermentation has finished and the appearance is optimal, preheat the oven to 185°C and bake the ensaimadas for 6 minutes.
  9. Cooling and decoration: Once out of the oven, let them cool for 10 minutes and sprinkle them with icing sugar to our liking.
