Massini is a delicious cake that combines a base of soft and fluffy cake, with a burnt cream, cream and chocolate.
The base of the Massini cake is a classic, fluffy cake, enriched with a syrup. The aim is a tender and honeyed cake, very well harmonized with the rest of the ingredients.
On top of it we have the truffle ganache, which is a 70% Valrhona chocolate with a little cream. When the ganache is well emulsified we can start dressing the cake.
The cream, along with the truffle, is the perfect complement to Massini. Beat the fresh cream until it boils and acquires a light and airy, stable texture. This cream will contrast magnificently with the intensity of the chocolate. It will be the ideal counterpoint.
Burnt cream, a fundamental element. Made with milk, eggs, sugar, wheat flour and vanilla. The cream cooks slowly until it acquires the desired consistency. That is, stable and silky. When it's ready, arrange it on top of the cake and subtly burn it. The result has to be fascinating waters, a mirror.
