First of all, we will make a sauté of onion, red pepper, green pepper and finely grated carrot. The combination of onion and carrot is sweet, the tomato will balance the flavor with its characteristic, necessary acidity.
Next, add the farmer's sausage to the sofrito. Excellent quality butifarra, from our local producer, trusted artisan. Little chopped sausage and generous in pepper. When all this is done, we will have the seasoning ready to be filled and baked.
