The Schnecken is a piece of snail-shaped pastries, made of croissant dough and filled with pastry cream, raisins and golden apple brunoise.

Our Schnecken is made with a puff pastry dough rich in top quality Corman butter. It gives it a delicate texture, a rich and noble flavor, handmade. The other ingredients are: wheat flour, sugar, salt, yeast, milk and egg for painting. Our Schnecken is a superlative experience: crispy sheets, soft, moist crumb and slightly honeycombed. It melts in your mouth.

The preparation of our Schnecken requires a very specialized technique, similar to that of the croissant. First of all, we make the dough and stretch, then we apply a thin layer of pastry cream and then we distribute the raisins and the golden apple brunoise. Finally we roll up, we already have a recipe done.

The last step is to paint the pieces with egg yolk and put them to ferment. Once the fermentation is ready, we paint again and bake.
