Melindros are delicious specialties of the traditional pastry of the country, which stand out for their light and fluffy texture. These small elongated sponge cakes are ideal to accompany a cup of coffee, tea or hot chocolate. It is also an indispensable ingredient for desserts such as tiramisu.
Melindros are made from a soft dough of wheat flour, eggs, sugar, vanilla and a tip of salt. Indeed, separate the eggs from the whites, beat the yolks with sugar and mix this dough with the sifted flour. Finally, we add the assembled whites and mix little by little. The dough will be ready.
We fill the pastry sleeve with this dough and make elongated strips of between 7 and 8 cm. Top with icing sugar on top and bake.
