The Merveilleux cake is an authentic French pastry delight, combining layers of soft meringue, with a light ganache from 70% chocolate and chocolate shavings.

Meringue is one of the main components of Merveilleux. Indeed, a mixture of egg whites and sugar that we beat until obtaining a stable texture and a pearl color. This meringue forms in small circular layers that are the basis of the cake.

The chocolate ganache is the rich and creamy filling that we use for Merveilleux. Made of 70% Valrhona chocolate and hot cream, we assemble until a light and silky texture is obtained. This ganache is used to bring an exquisite creaminess to the cake. It also gives us volume and structure.

As a decoration of Merveilleux, we use chocolate chips. 70% chocolate, intense and crunchy. In this case, we will obtain a very attractive aesthetic and a fascinating contrast of textures.
