Ensaimada

The ensaimada is an authentic jewel of the traditional pastry of our country. This characteristic delight is synonymous with Mallorcan pastry and captivates palates with its delicate and fluffy texture.

The ensaimada is made from a light and aerated dough, made with wheat flour, eggs, sugar, water, yeast and pork lard. Its preparation requires patience and technique. When we have the mass in optimal condition, we form and give it the famous circular shape. Before baking, it should ferment properly for a minimum of 15 hours in optimal humidity conditions.

Once baked, the result is a golden ensaimada crispy on the outside, with a generous layer of icing sugar on top. The interior will be soft and delicate. The grace of this product is the crunchiness on the outside and tender inside, highly volatile. Slightly moistened thanks to lard lard.

Without a doubt, it is one of the most complex and technical products in its execution. The technique and execution is 100% handmade, started and finished at home.
