Raspberry palm


Traditional sweet, made with puff dough, sugar, egg, butter and a delicious raspberry jam.

ALLERGENS: Gluten, lactose, egg, traces of soy and nuts.


The raspberry palm is a real delight that captivates the palate with the elegant combination of puff pastry and raspberry jam.

The structure that supports the jam is the leaf. Puff pastry is obtained from wheat flour, water, salt and butter, which is used for laminate.

First we make a block and let it rest. After an hour, spread the dough and apply the butter. Then we make the folds and let the cold dough rest for a minimum of 30 minutes. We will repeat this operation three times. Before baking it we will have had to refrigerate it for at least another hour. Good caramelization of this leaf is very important. Making sheets is a challenge. If we respect the times and the ingredients are top quality, we will get a delicate, subtle, elegant and very crunchy leaf.

But what really makes the palm tree have its identity is raspberry jam. A traditional, artisan jam, made by us, of natural raspberries, sugar and a lemon tip. The sweetness and acidity explode with the crunchiness of the leaf. Sensational!

The raspberry palm is ideal for breakfast or snacks. For the youngest and for the oldest. The raspberry palm has many followers and is one of our hits.
