El Succès is a cake that perfectly combines slices of meringue and almond, with a cream of cream and white chocolate, and fresh natural raspberries. It is a cake that stands out for its different heights and textures. A classic of the most traditional pastry.
To achieve our structure, we first assemble the meringue with organic egg whites and sugar. When we have the stable and pearl meringue, we mix with a spatula, little by little, the chopped and toasted almonds. We must preserve the structure of the meringue and prevent it from wearing out. When the mixture is done, we carefully fill a pastry hose and draw the discs of the Event. At this point, we will have the preparation ready to bake.
Between the two levels, we will fill the Succès with whipped cream with a tip of white chocolate to enhance its flavor. In between the whipped cream we will intersperse natural raspberries that will give a slightly acidic and refreshing note to the whole. In the center of the cake we will have an artisan jam of natural raspberries that will balance the whole.
El Succès, is a classic cake, of a lifetime. In fact, when Baixas opened more than 60 years ago, Succès was one of the cakes we offered. Over the years, it was discontinued, and since 2022 we have wanted to recover the recipe. Like the one on the first day. El Succès, in large and individual format, is a very original cake, ideal for any special celebration.
