The pickled anchovy is a classic and delicious aperitif that offers us all the flavor and freshness of the sea. This dish combines anchovies marinated in vinegar with a mince of Mediterranean vegetables very well avenues.

The anchovy in vinegar is the protagonist of this appetizer. With a smooth and honeyed consistency, the anchovy is marinated in vinegar and other seasonings to obtain a slightly acidic, refreshing marine note.

The Sevillian olives without stone are the perfect complement to accompany the anchovies. The texture and flavor of the olive are intense. They bring a saline character, an elegant note. The combination is reminiscent of good pickles.

We finish our recipe with a red pepper vinaigrette, green pepper and spring onion that covers the olive. The counterpoint will be the sweet finish touch of Modena vinegar, which will contrast with the acidity of the dish and provide balance in the mouth.
