Diplomats – Inverted puff pastry recipe

Ingredients
Inverted puff pastry dough
Ingredients A:
- Butter 82% – 560 g
- Loose flour – 240 g
Ingredients B:
- Loose flour – 560 g
- Flower of salt – 24 g
- Butter 82% – 180 g
- Water – 240g
- White wine vinegar – 4 g
Preparation of the dough
Step 1: Making the base
- In a mixer, mix the ingredients in group A for 10 minutes at low speed.
- Divide the dough into two parts, roll out and let rest for 30 minutes in the refrigerator .
Step 2: Preparing the second dough
- Mix the ingredients from group B in the mixer for 10 minutes at low speed .
- Divide into two parts, stretch and let rest for 30 minutes .
Step 3: Incorporating the dough
- Place dough B inside dough A and close properly.
- Roll out the dough three times , making two double folds and one single fold .
- Let rest for 20 minutes between each fold .
Preparing the icing
Ingredients
- Icing sugar – 1,200 kg
- Egg whites – 325 g
- Juice of half a lemon
- Cream of tartar – 4 g
Procedure
- In a mixer with a paddle attachment, mix the sifted icing sugar with the tempered egg whites and cream of tartar .
- Beat for 6 minutes at medium speed .
- Add the strained lemon juice and mix well.
- Reserve for use.
Assembly of the Diplomats
Procedure
- Spray water on the baking trays.
- Roll out the puff pastry dough to 2 mm thickness and let rest for 30 minutes .
- Apply 380 g of icing per tray and spread evenly.
- Cut the dough into 7.5 cm x 2.5 cm rectangles with a bicycle.
- Sprinkle flaked almonds in the center of each rectangle.
Baked
- First phase : Cook for 5 minutes at 165ºC on speed 4.
- Second phase : Bake for 50 minutes at 140ºC with speed 2.
- Check that the puff pastry base is completely cooked before removing from the oven.
Decoration
- Slivered almonds can be added to give a crunchy and decorative touch.
