La leyenda cuenta que naci\u00f3 en 1683, cuando los panaderos vieneses, trabajando en la soledad de la noche, dieron la alarma ante el asedio otomano a la ciudad. Para celebrar la victoria, crearon un bollo con forma de media luna (<em>H\u00f6rnchen<\/em>), emulando el s\u00edmbolo de la bandera otomana.<\/p>\n\n\n\n<p>No fue hasta que Mar\u00eda Antonieta, austriaca de nacimiento, introdujo el <em>Kipferl<\/em> en la corte francesa, que este bollo comenz\u00f3 su evoluci\u00f3n. Sin embargo, el <strong>croissant de mantequilla artesano<\/strong> tal y como lo conocemos hoy \u2014con su hojaldrado perfecto\u2014 es una innovaci\u00f3n parisina del siglo XX. Es esa tradici\u00f3n de excelencia la que recogemos y perfeccionamos cada d\u00eda en Baixas.<\/p>\n\n\n<h2 class=\"wp-block-heading\" id=\"la-alquimia-de-los-ingredientes-la-receta-baixas\"><strong>La Alquimia de los Ingredientes: La Receta Baixas<\/strong><\/h2>\n\n\n<p>Un gran croissant nace de la selecci\u00f3n rigurosa de la materia prima. En nuestra receta no hay secretos, solo calidad extrema y proporciones exactas. Para conseguir la textura y el sabor caracter\u00edsticos del <strong>croissant Baixas<\/strong>, utilizamos una mezcla precisa de harinas Bagatelle (T45 y T65) y un porcentaje muy elevado de mantequilla de primera calidad.<\/p>\n\n\n\n<p>A continuaci\u00f3n, detallamos la composici\u00f3n de nuestra masa madre para una producci\u00f3n artesanal en nuestro obrador:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Az\u00facar 870,06 g \/ 4,25 %<\/li>\n\n\n\n<li>Sal 214,3 g \/ 1,05 %<\/li>\n\n\n\n<li>Harina T45 Bagatelle blanca 6857,6 g \/ 33,47 %<\/li>\n\n\n\n<li>Harin T65 Bagatelle Negra 1714,4 g \/ 8,37 %<\/li>\n\n\n\n<li>Levadura 120 g \/ 0,58 %<\/li>\n\n\n\n<li>Leche 4714,6 g \/ 23 %<\/li>\n\n\n\n<li>Mantequilla 6000 g \/ 29,28 %<\/li>\n\n\n\n<li>TOTAL 20491g \/ 100 %<\/li>\n<\/ul>\n\n\n\n<p>Como puedes observar, la mantequilla representa casi el <strong>30% del peso total<\/strong> de la f\u00f3rmula. Esto es lo que garantiza ese sabor l\u00e1cteo inigualable y una fundencia perfecta en boca.<\/p>\n\n\n<h2 class=\"wp-block-heading\" id=\"el-proceso-donde-la-tecnica-supera-a-la-receta\"><strong>El Proceso: Donde la T\u00e9cnica Supera a la Receta<\/strong><\/h2>\n\n\n<p>Tener los ingredientes es solo el principio. La magia del <strong>croissant de mantequilla artesano<\/strong> reside en el \u00abtourage\u00bb o laminado. En Baixas, seguimos un procedimiento meticuloso para garantizar el hojaldrado:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>El Past\u00f3n:<\/strong> Trabajamos con bloques de masa (pastones) pesados a 2415 g, a los que incorporamos la mantequilla pesada a 1000 g para el laminado.<\/li>\n\n\n\n<li><strong>El Plegado:<\/strong> La estructura de las capas se consigue mediante una t\u00e9cnica precisa: realizamos <strong>1 pliegue doble y 1 pliegue sencillo<\/strong>. Esto crea las miles de finas capas que se separar\u00e1n durante el horneado.<\/li>\n\n\n\n<li><strong>Fermentaci\u00f3n Controlada:<\/strong> La paciencia es clave. Nuestros croissants fermentan durante <strong>3 horas a 29 grados<\/strong>. Este calor suave permite que la levadura trabaje lentamente, desarrollando aromas complejos sin acidez.<\/li>\n\n\n\n<li><strong>Choque T\u00e9rmico y Horneado:<\/strong> Antes de entrar al horno, enfriamos las piezas a 15 grados y las pintamos para obtener ese color dorado caracter\u00edstico.
