g<\/strong><br>Flor de sal: <strong>24 g<\/strong><br>Mantequilla 82% MG (pomada): <strong>180 g<\/strong><br>Agua: <strong>240 g<\/strong><br>Vinagre de vino blanco: <strong>4 g<\/strong><\/p>\n\n\n\n<p style=\"font-size:24px\"><strong>Crema chantilly<\/strong><br>Nata 35% MG (muy fr\u00eda): <strong>1 litro<\/strong><br>Az\u00facar glas (tamizado): <strong>40 g<\/strong><\/p>\n\n\n\n<div style=\"height:9px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 id=\"elaboracion-del-roscon-de-nata\" class=\"wp-block-heading\"><strong>Elaboraci\u00f3n del rosc\u00f3n de nata<\/strong><\/h2>\n\n\n\n<p style=\"font-size:33px\"><strong>Empastado de mantequilla<\/strong><\/p>\n\n\n\n<p style=\"font-size:24px\">Mezcla <strong>560 g de mantequilla<\/strong> con <strong>240 g de harina floja<\/strong> hasta obtener una masa homog\u00e9nea y manejable.<\/p>\n\n\n\n<p>Forma un rect\u00e1ngulo de <strong>1,5\u20132 cm de grosor<\/strong>, envu\u00e9lvelo y refrig\u00e9ralo hasta que est\u00e9 firme pero flexible.<\/p>\n\n\n\n<div style=\"height:8px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-large-font-size\"><strong>D\u00e9trempe (masa)<\/strong><\/p>\n\n\n\n<p>En un bol, integra <strong>560 g de harina floja<\/strong> con <strong>24 g de flor de sal<\/strong>. Incorpora <strong>180 g de mantequilla pomada<\/strong> y <strong>4 g de vinagre<\/strong> disueltos en <strong>240 g de agua fr\u00eda<\/strong>.<\/p>\n\n\n\n<p>Mezcla solo lo necesario para obtener una masa suave (sin desarrollar en exceso el gluten). Forma un rect\u00e1ngulo, f\u00f3rralo con film y refrig\u00e9ralo <strong>30\u201340 minutos<\/strong>.<\/p>\n\n\n\n<div style=\"height:41px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-large-font-size\"><strong>Envoltorio y laminado<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li style=\"font-style:normal;font-weight:400;letter-spacing:0.5px\"><strong>Coloca el empastado fr\u00edo sobre la mesa<\/strong>. Sit\u00faa encima la d\u00e9trempe y envu\u00e9lvela de manera que el empastado quede por fuera (configuraci\u00f3n de hojaldre invertido).<\/li>\n\n\n\n<li><strong>Primer doblez doble:<\/strong> estira en un rect\u00e1ngulo largo (8\u20139 mm), dobla en cuatro (como una carta doble). Refrigera m\u00ednimo <strong>30 minutos<\/strong>.<\/li>\n\n\n\n<li><strong>Segundo doblez doble:<\/strong> repite el estirado y el doblado. Refrigera m\u00ednimo <strong>30 minutos<\/strong>.<\/li>\n\n\n\n<li style=\"font-style:normal;font-weight:400;letter-spacing:0.5px\"><strong>Doblado simple:<\/strong> estira de nuevo y dobla en tres. Refrigera m\u00ednimo <strong>30 minutos<\/strong> antes del estirado final.<\/li>\n<\/ol>\n\n\n\n<div style=\"height:8px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-large-font-size\"><strong>Formaci\u00f3n y cocci\u00f3n<\/strong><\/p>\n\n\n\n<p>Estira a <strong>4\u20135 mm<\/strong> y corta una corona (tortell). Pincha ligeramente para controlar el desarrollo.<\/p>\n\n\n\n<p>Coloca sobre una bandeja con papel. Espolvorea una fina capa de az\u00facar glas (o az\u00facar muy fino) para favorecer el glaseado.<\/p>\n\n\n\n<p>Hornea a <strong>170\u202f\u00b0C<\/strong> durante <strong>50 minutos<\/strong> (calor uniforme). A medio horneado, espolvorea ligeramente m\u00e1s az\u00facar y, si deseas un brillo intenso, gira el tortell <strong>5\u20138 minutos<\/strong> para caramelizar de manera homog\u00e9nea.<\/p>\n\n\n\n<p>Enfr\u00eda sobre una rejilla.<\/p>\n\n\n\n<div style=\"height:17px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-large-font-size\"><strong>Crema chantilly<\/strong><\/p>\n\n\n\n<p>Con la nata muy fr\u00eda, bate a velocidad media; cuando comience a espumar, a\u00f1ade <strong>40 g de az\u00facar glas tamizado<\/strong> en lluvia.<\/p>\n\n\n\n<p>Bate hasta obtener picos firmes y una textura cremosa, sin sobrebatir. Reserva en fr\u00edo en una manga pastelera con boquilla rizada grande.<\/p>\n\n\n\n<div style=\"height:13px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-large-font-size\"><strong>Decoraci\u00f3n y montaje<\/strong><\/p>\n\n\n\n<p>Con una sierra, corta el tortell por la mitad en horizontal.<\/p>\n\n\n\n<p>Rellena la base con ondas regulares de chantilly utilizando la boquilla rizada.
