Una vez tengamos los ingredientes mezclados y la temperatura del alm\u00edbar sea la \u00f3ptima, a\u00f1adiremos con un cazo el alm\u00edbar poco a poco. Una vez obtenida la masa bomba, a\u00f1adiremos poco a poco la almendra Marcona y la ralladura de lim\u00f3n. Podremos a\u00f1adir el poco alm\u00edbar que hemos guardado, para rectificar la textura y sabor. A continuaci\u00f3n, trabajaremos la masa en la batidora entre 25 y 30 minutos hasta obtener la textura deseada. Vamos a utilizar una velocidad media.
