The aim is a tender and honeyed cake, very well harmonized with the rest of the ingredients. <\/p>\n<p>On top of it we have the truffle <span class=\"hiddenSpellError\">ganache<\/span>, which is a 70% <span class=\"hiddenSpellError\">Valrhona <\/span>chocolate with a little cream. When the <span class=\"hiddenSpellError\">ganache <\/span>is well emulsified we can start dressing the cake. <\/p>\n<p>The cream, along with the truffle, is the perfect complement to Massini. Beat the fresh cream until it boils and acquires a light and airy, stable texture. This cream will contrast magnificently with the intensity of the chocolate. It will be the ideal counterpoint.   <\/p>\n<p>Burnt cream, a fundamental element. Made with milk, eggs, sugar, wheat flour and vanilla. The cream cooks slowly until it acquires the desired consistency. That is, stable and silky. When it&#8217;s ready, arrange it on top of the cake and subtly burn it. The result has to be fascinating waters, a mirror.     <\/p>\n<p>Massini is the classic cake par excellence.
