The slow fermentation \u2014 between 12 and 18 hours \u2014 is what gives it that fluffy, slightly layered texture that sets it apart from any industrial coca. There are no shortcuts: time is the ingredient that costs the most.<\/p>\n\n\n\n<p>Once the dough has fermented, the Baixas team shapes each coca by hand.
