For three bars of approximately 350 g:

  • Baixas Pink Pasta : 725 g
  • Cocoa butter : 80 g
  • Roasted almond or hazelnut kernels : 250 g

Making the Pink Pasta Baixas

The Pasta Rosa Baixas is the essential base for nougat. To prepare it, you will need:

Ingredients:

  • Roasted Marcona almond powder: 1,050 g
  • Roasted hazelnut powder: 600 g
  • Sugar: 1,300g
  • Cocoa butter: 100 g
  • 26% milk powder: 400 g
  • Salt: 3.5 g
  • Liquid vanilla: 7.5 g

Process:

  1. Toast the almonds and hazelnuts : Make sure they are well browned to enhance the flavor.
  2. Grind the almonds and hazelnuts : Pass them through the grinder three times to achieve a very fine texture.
  3. Add the dry ingredients : Mix the sugar, powdered milk, salt and vanilla with the almond and hazelnut powder.
  4. Refine again : Pass the mixture through the refiner twice more and then add the cocoa butter melted at 37°C.
  5. Final refining : Pass the mixture through the refiner one last time to obtain a completely homogeneous texture.

Preparation of Hazelnut Praline Nougat

  1. Weigh the Pink Pasta : Measure the 725 g needed for this recipe.
  2. Tempering the Pink Paste : Heat the mixture to 27°C to ensure good crystallization.
  3. Add the almond or hazelnut kernels : Gently incorporate the 250 g of kernels into the dough.
  4. Molding : Pour the mixture into plastic molds or a nougat tray lined with parchment paper.
  5. Crystallize : Let sit overnight until the mixture has completely hardened.
