El Sol is a cake that combines a base of Sablé Bretó, a Sabayon of passion fruit and mango, and a delicate dry meringue decoration. This cake stands out for its spectacular presentation and tropical flavors.

The base of Sablé Bretó is a crunchy butter dough, made with wheat flour, the best quality butter, sugar and a tip of salt. This base provides a rich and buttery texture, solid enough to support Sabayon.

PPassion fruit and mango are the stars of this recipe, now we make Sabayon. First of all, we choose the best fruit and make the puree. Add organic eggs, sugar and start boiling. At this point, we add white chocolate, cocoa butter and gelatin. The sabayon is finished.

Finally, we mould and decorate with dried meringue to give identity to the cake. This dry meringue, with its crunchy and light texture, provides an elegant presentation and a very interesting contrast of textures.
